Is it just random or are there rules on what colour countries are displayed as because every atlas I have seen specific countries have a certain colour.

Nope. Political maps are only made to show the borders of countries, their cities, and population. The only rule is that no country is supposed to touch another country of the same color. So, for you, it's a sheer coincidence.
