The gif shows the dehydration of sucrose (C12H22O11) with concentrated sulfuric acid (H2SO4).

When the reaction is complete, only carbon and a small amount of water and acid remain.

C12H22O11 + H2SO4 produces 12C + 11H2O + acid/water mix

The reaction is strongly exothermic and the water immediately turns into steam and the carbon expands fastly.
