because your mind likes to create beauty out of novelty. stars are burning hot balls of gas, when you look at the sun, you don't necessarily think of it as beautiful. it's awesome no doubt but it doesn't inspire beauty. your mind imagines another world that doesn't hold all the pain and ignorance of this world. the stars provide that illusion. you can escape your humdrum life when star gazing. it offers possibilities.

violent conditions within the universe produce spectacles known as quasars, supernovae (When stars die out they blow up), etc. these crazy events produce unimaginable temperatures that fuse elements together and in the process huge explosions emit ridiculous designs across the unvierse that I am assuming are what you are referring too.

There is a lot of mass in the universe, and there is a limit on how big a star can be.
The alternative is have a lot of not so big stars.
