-Neutron stars would have solid surfaces. As would a white dwarf stat that has completely cooled off.......
or just made of gas? or both?

All Stars (Suns) are Gas Giants undergoing Nuclear Fusion. No Solid surface.

Basically they are made up of gas and have no solid surface at all.

Until that is they come to the very end of their life cycle.depending on the size and mass of the star they will end up either as a "white dwarf"(solid surface)or a "neutron/pulsar star"(solid surface) or they even become "BLACK holes" surface state (????or Singularity).

NO. Stars are giant balls of mainly Hydrogen & Helium gases. Due to intense pressure & temperature at their core, the core is plasma.
