Water potential question please help!

please help!-Its all about osmosis and osmotic pressure. Why do you think so many foods have so much sodium in them now a days? Its too preserve them of course by creating a hypertonic envirnoment. To answer your question slightly........
If a potato core ( just this cylinder of potato) is allowed to dehydrate in open air, would the water potential of the potato cells increase or decrease. I don't understand :c please explain why too.
Also, in my notes it says that when you add solute to a solution the water potential goes down. I don't get why, please help!

To answer your question slightly....Where would a potato dry out "quicker" you think. In the open air or in a solution full of salt (Na+). By terms of osmosis, water will always move from an area of lower solute concentration to an area of higher solute concentration. Or just keep telling yourself, "solutes suck." Because they do! An area with a higher solute concentration will always attract more water to it.

Now try answering your question. In which envirnoment will the potato dry out quicker?
