Half a Bottle of Wine...

Why is it important to put the cork back on half a bottle of wine overnight?

Because oxygen in the air can react with the alcohol and can turn it in to vinegar.

This sometimes takes a few days but the taste changes overnight.

No idea, never tried it. We never leave half a bottle, always finish it off and that solves everything.
