Why can we see UV light even though it is beyond the visible light spectrum

When UV is shone on the ink in dark room, ink produces the light which is visible to us. But the surrounding reflects the UV that the surrounding receives from the torch.So, the simple answer is, the torch produces UV as well as visible violet light.......
It is may be that the torch produces a range of light from UV to violet. Your eyes are detecting only the violet light and you think that you can see the UV.

You can never see UV with your bare eyes. You can only see the effects caused by UV. This principal is used in invisible inks and a lot of different objects. When UV is shone on the ink in dark room, ink produces the light which is visible to us. But the surrounding reflects the UV that the surrounding receives from the torch.

So, the simple answer is, the torch produces UV as well as visible violet light. Another possibility may be that the torch only produces visible violet light but not UV.

Safety precaution: Don't take a UV (Ultraviolet) source or IR (Infra red) source close to your eyes. As your eyes cannot detect these light, you iris will not take any action to reduce the excessive amount of radiation entering your eyes.

Ultraviolet (UV) light has shorter wavelengths than visible light. Though these waves are invisible to the human eye, some insects, like bumblebees, can see them!
If you are referring to a Money Scanner just because it's coloured Violet it doesn't make it UV. The UV which it produces can light up certain hidden images in money etc..

Our eyes don't have the right configuration/equipment? for it.

If you make some modifications to our eyes you could see UV.

Remember UV is just a different wavelength of light from the wavelengths of the visible spectrum.

Some animals have the right features in the eye to receive and process UV light.

we can not see UV light directly. it is invisible for our eye, but it is detected through the effects produced by it, like the glow observed in a fluorescent lamp.due to phenomenon caused by UV light.

The persistence of vision for the human eye is in the wavelength range of 4*10^-7m to 8*10^-7m whereas the ultraviolet radiations are of wavelength 1*10^-8m to 4*10^-7m .
