If you buy the generic 2% concentration at Walgreens, can you let the water evaporate, or would the hydrogen peroxide also evaporate?

First of all, why would you want to? Second, you can purchase concentrated peroxide, but it probably falls under various laws regarding hazardous materials, so you probably would not be able to purchase it if you don't own a commercial lab of some kind with the right paperwork.

Concentrated H2O2 is something like 28%, and has to be kept cold (below 32F) and out of the light, it is highly unstable. Concentrating it from 2% would probably be very troublesome and possible expensive (glassware, etc).

The peroxide will decompose before the water will evaporate.

I don't see how you can say I'm mocking you. However, since you opened that door, if the height of your ambition is to pour peroxide on your shoe to see what happens then I'm going to make the guess that you aren't a major in chem or chem engineering.
