We wouldn't fly out into space because of gravity keeping us down. And the earth is so big that we can't feel it spin so we wouldn't be able to feel the stop but we would know we stopped because we would have one long day and night for a year.

Gravity has nothing to do with the Earth's rotation. It is a fundamental property of all matter, whether it's spinning or not. If anything, our weight is slightly reduced at the equator because of the Earth's spin.

Earth's spin is not what holds us on its surface. What keeps us on the surface is gravity, and that's not effected by spin.
