Ordinal - Categories with different names and a specific ranking or order like places in a race, but have no number precision or relative size.
Interval - Have ranking with numerical meaning, but no true zero, meaning you can go backwards as much as you like without having to stop. One example would be time, you can go back in time from 1:00 to 12:00 and keep going and never stop.
Ratio - Have ranking, numerical meaning, and a true zero. An example would be Salary, as you can't go less than zero for a salary.
