The sun emits electromagnetic radiation (light) from all wavelengths; x-ray, gamma, visible, ultraviolet, infrared, and radio. However, it emits all these in different amounts. There is a certain wavelength of light that the Sun emits the most of and that's called the peak wavelength. The Sun appears yellow because the peak wavelength falls in the area of the electromagnetic spectrum where we see yellow light. This means that the sun emits mostly yellow light and that's why we see it as yellow. The peak wavelength is dependent on the Sun's temperature and luminosity as described in Wien's Displacement Law which is; Lambda Max = (3 x 10^7) / T Where,

Lambda Max = the peak wavelength
T = Temperature

So suppose our sun was a blue supergiant star. It of course would be blue but it would be blue because it emits most of it's light in the blue side of the spectrum. It's peak wavelength is actually in the x-ray but we cannot see x-rays with our eyes so it appears blue to us because the peak wavelength is closer to that side of the spectrum rather than the red.
