Because it wouldn't be matter if it didn't.

Atom cores consist of quarks and these bind because of the strong atomic force and the gluons that act as messengers for the strong attraction among the quarks. And some atoms have a dearth of electrons; so they have plus value charge. Other atoms have excess electrons; so they are negatively charged.

As plus attracts minus, the plus and negatively charged atoms come together and share electrons and space. That forms molecules, the stuff that you, me, and my dog Boots are made of.

By definition, matter has mass and occupies space.

The smallest stable unit that fills this requirement is an atom.

Breaking matter down into its smallest elemental parts gives us atoms.
That's why different types of atoms are called "elements."
