I have been researching empathy and I have have got MOST of the symptoms and even some physical symptoms but the way they describe it I don't understand because they said like when you are in public you walk past a group of people and you suddenly turn bipolar but I am not like that.
I can turn it on and off. Like I can choose which people I want to feel their emotions, etc and then I read about how to control it and I don't do any of that I just control it and I don't know how!!
Oh and I can also read peoples thoughts...sort of. I can FEEL their thoughts, if that makes sense :/
because I often answer their thoughts rather than their voice :/
Am I just naturally gifted in empathy or something?

Empathy and telepathy work around people you don't know, and aren't interacting with. If you're focusing on someone and start to know what they're thinking and feeling, it's pretty normal. Your subconscious mind can read their body language and pheromones and interpret that.
