Yes, everything we are very much aware of consists of atoms and subatomic particles. But what happens in a black hole? or even a neutron star?

What happens with dark matter? Is this composed of atomic particles? Or is it a very different form of matter? Note that we can deduce it's there, but we can't exactly measure it.

Are subatomic particles compose of quarks? Or is everything - energy and mass - just how we perceive super strings, symmetric or otherwise, as they come out of dimensions we can't perceive into our normal four dimensional view (rather like we can see the visible electromagnetic spectrum, but we can't see outside it (although we can detect the other frequencies/wavelengths.

All matter, yes. That is, energy like light isn't, but anything solid, liquid, or gaseous is made up of atoms (and usually, atoms bonded into molecules). A star consists largely of the fourth form of matter, plasma, which is atoms that have been ripped apart and ionized because of the high-energy/high-heat environment they're in.
