One hour it's cloudy and cold and the next it's super hot with searing sun, even the weather people cant be trusted anymore, why so unpredictable?

It's because we have just came out of a strong La Nina cycle, which tends to play havoc with the atmospheric pattern. We are entering what will likely be an ENSO neutral state, so the weather should return to what you are more accustomed to. However, it will likely take several months for things to stabilize, as there is several months of atmospheric "lag time", if you will, while things settle down.
