More seriously, Liz gave a good answer. Up, down and indeed any direction is arbitrary in space.-There is no top or bottom. Space substance surrounds the earth in all directions.......
If I went to the south pole and launched a Hubble what would I get pictures of?
I mean what in the universe is below earth,

There is no top or bottom. Space substance surrounds the earth in all directions. Thus it is the pressure of gravity that envelopes the earth that causes it to form the shape that we observe.
Astronomers can observe space at the north pole or south pole. in the north pole we see the north star called Polaris in the south pole we see the star called the southern Cross. Hence from different location on earth we see the sky differently. It is basically relativity.
Basically the Physical Universe is not homogeneous. That means we see different thing at different location of the Universe .
It contains about one trillion galaxies consisting of groups of stars which are basically balls of plasma.Hence we only have seen just a small number of Galaxies and we can never in our life time discover them all. Never the less for the first time in History the Planck Telescope produced images that revealed the actual shape of the Universe and its boundary.

No, seriously. There's just more of the same stuff in any direction you go, stars, nebulae, gases and galaxies.

Australia, I'm sure they would argue, is not "below the Earth". You can;t have a "below" in free space.

well it depends what time of year it is but the southern cross is there all year round so you would probably see stars in that vicinity of the sky.

There is nothing called Below the earth, besides u can see the southern sky from anywhere under the equator. so its not a "Mystery"
